2150g packages Garlic & Fine Herbs Boursin Cheese - softened (remove from fridge 10 minutes before making the dip))
2cupschopped tomatoes (Roma tomatoes or Cherry tomatoes)
3tbspthinly sliced fresh basil
2small garlic cloves, thinly sliced or minced
2tbspfinely chopped red onion
2tbspextra-virgin olive oil
1tbspbalsamic vinegar
1/2tspkosher salt
pinchchili flakes or red pepper flakes
Instructions
Remove the packages of Boursin Cheese from the fridge and set aside.
To a medium-sized bowl add the chopped tomatoes, thinly sliced fresh basil, minced garlic, finely chopped red onion, olive oil, balsamic vinegar, salt and a pinch of chili flakes. Use a spoon to mix well and set aside (leave for 10 minutes to allow the flavours to meld together).
While the tomato mixture is sitting, use a spoon to spread both packages of softened Boursin Cheese in a shallow / low bowl or even on a plate.
After the tomato mixture has sat for 10 minutes, use a slotted spoon to spoon the mixture onto the softened boursin cheese. Important to use a slotted spoon as you want as little liquid from the tomato bowl to transfer to the boursin cheese.
Garnish with more fresh basil and serve with toasted baguette (see how to make crostini below) or your favourite crackers.
Notes
To make crostini (toasted baguette):
Preheat the oven to 400°Fahrenheit. Use a bread knife to slice a baguette into 1-inch thick slices, about 20-24 slices. Place the baguette slices on a parchment paper lined baking sheet. Brush the bread slices with olive oil on one side and place in a single layer on the baking sheet. Bake for 5 minutes, then flip and bake for another 5 minutes until toasted. Set aside.
