1/2cup(125 grams) plain full fat brick cream cheese, softened(don't use the spreadable cream cheese from a tub)
1tsppeppermint extract
4oz(115 grams) semi-sweet or dark chocolate chips
4oz(115 grams) white chocolate chips
2tspcoconut oil, divided
1candy cane, crushed into tiny pieces
Instructions
Lay a piece of parchment paper on a baking sheet and set aside. Add gluten free oreos into a food processor and pulse cookies into fine crumbs.
Add cream cheese and peppermint extract and pulse to combine. Once combined it will be a soft, dough-like mixture.
Scoop a heaping 1 tbsp per truffle onto a parchment-lined baking sheet, use your hands to roll into balls and set in the freezer for 45 minutes.
After 45 minutes, combine the each type of the chocolate chips in small bowls with 1 tsp coconut oil in each bowl. Melt the chocolate chips in the microwave in a microwave-safe bowl in 15 second increments, stirring after each 15 seconds, Let the melted chocolate sit for a few minutes before dipping the truffles in. You can use both types of chocolate or choose one and double the amount (i.e. 8 oz of chocolate chips). *You can also use the double boiler method for melting the chocolate if you prefer*
Dip each truffle into the melted chocolate, letting the excess chocolate drip off add back to the parchment lined baking sheet. Make sure to sprinkle crushed candy canes immediately over each truffle once they're dipped into the chocolate coating. *Using 2 forks is the easiest way to dip the truffles - it gives you an easy way to put each truffle onto the baking sheet after dipping.* Put the truffles back in the fridge for 30-45 minutes to finish setting.
Store in a parchment paper lined airtight container for up to 7 days. They can sit out for a few hours at a time if you're serving for dessert or at a party.
Notes
DO NOT use double-stuffed Oreos as they will add too much cream to the Oreo mixture.
This recipe is super customizable!
Top with crushed chocolate cookie crumbs instead of candy canes.
Drizzle on chocolate instead of fully dipping the truffles in melted chocolate.
Use milk chocolate to coat these Oreo truffles instead of semi-sweet or dark chocolate.
You can use regular Oreos instead of gluten-free Oreos to make this recipe if you don't have food allergies (gluten-free diet or celiac).
