Ingredients needed to make these delicious oreo truffles
Oreo cookies: The key to this recipe are classic gluten-free Oreo cookies! (don’t use double-stuffed) You’ll make sure to pulse the cookies into Oreo crumbs as the base of this recipe
Cream cheese: use plain full-fat brick cream cheese for this no bake recipe; don’t use cream cheese from the rub
Peppermint extract: peppermint extract is a MUST to make these no bake peppermint Oreo truffles!
Chocolate: I like to dip these Oreo truffles in both semi-sweet chocolate chips and white chocolate chips. Make sure your chocolate chips are gluten-free to ensure this recipe stays gluten-free.
Candy canes: For an extra dose of peppermint flavour, I like to top these gluten-free Oreo truffles with crushed up candy canes. Alternatively you could use crushed cookies or Christmas sprinkles

How to make these easy gluten free oreo truffles
Step 1: Lay a piece of parchment paper on a baking sheet and set aside. Add gluten free oreos into a food processor and pulse cookies into fine crumbs.
Step 2: Add cream cheese and peppermint extract and pulse to combine. Once combined it will be a soft, dough-like mixture.
Step 3: Scoop a heaping 1 tbsp per truffle onto a parchment-lined baking sheet, use your hands to roll into balls and set in the freezer for 45 minutes.
Step 4: After 45 minutes, combine the each type of the chocolate chips in small bowls with 1 tsp coconut oil each. Melt the chocolate chips in the microwave in a microwave-safe bowl in 15 second increments, stirring after each 15 seconds, Let the melted chocolate sit for a few minutes before dipping the truffles in. You can use both types of chocolate or choose one and double the amount (i.e. 8 oz of chocolate chips). *You can also use the double boiler method for melting the chocolate if you prefer*
Step 5: Dip each truffle into the melted chocolate, letting the excess chocolate drip off add back to the parchment lined baking sheet. Make sure to sprinkle crushed candy canes immediately over each truffle once they’re dipped into the chocolate coating. *Using 2 forks is the easiest way to dip the truffles – it gives you an easy way to put each truffle onto the baking sheet after dipping.* Put back in the fridge for 30-45 minutes to finish setting.
Step 6: Store in a parchment paper lined airtight container for up to 7 days. They can sit out for a few hours at a time if you’re serving for dessert or at a party.
