What is Boursin cheese?
Boursin is a soft and creamy cheese with a very spreadable texture. It’s the perfect cheese for many appetizers due to the variety of flavours it comes in.

Ingredients needed
Boursin Cheese: I love to use Garlic & Herbs Boursin Cheese as the base for this bruschetta appetizer because the flavours go so well with the tomatoes! Make sure to use 2!
Tomatoes: I like to use Roma tomatoes or Cherry tomatoes for the bruschetta topping,
Fresh basil: fresh basil is a must for this seasonal bruschetta dip recipe
Seasonings: bringing the bruschetta topping together is garlic, red onion, extra-virgin olive oil, balsamic vinegar and kosher salt

How to make this easy Boursin Bruschetta Dip appetizer
Step 1: Remove the packages of Boursin Cheese from the fridge and set aside.
Step 2: To a medium-sized bowl add the chopped tomatoes, thinly sliced fresh basil, minced garlic, finely chopped red onion, olive oil, balsamic vinegar, salt and a pinch of chili flakes. Use a spoon to mix well and set aside (leave for 10 minutes to allow the flavours to meld together).
Step 3: While the tomato mixture is sitting, use a spoon to spread both packages of softened Boursin Cheese in a shallow / low bowl or even on a plate.
Step 4: After the tomato mixture has sat for 10 minutes, use a slotted spoon to spoon the mixture on top of the cheese layer. Important to use a slotted spoon as you want as little liquid from the tomato bowl to transfer to the boursin cheese.
Step 5: Garnish with more fresh basil and serve with toasted baguette (see how to make crostini below) or your favourite crackers.

Variations on this bruschetta dip
- Bake it: Spread the Boursin cheese in an oven-safe baking dish. Bake at 400F for about 10 minutes until softened. Spoon the bruschetta on top and serve immediately.
- Add a drizzle of balsamic glaze on top of the tomatoes.
- Make them individual: Spread the Boursin cheese onto slices of toasted baguette. Top each slice with a scoop of bruschetta and serve as individual bruschetta crostini.

Expert tips
- There are so many options for what to serve to dip into this bruschetta dip! Some of my favourites are pita chips, your favourite crackers, crusty bread or slices of a baguette (toasted if desired to make crostini).
- Make sure to use TWO Boursin cheese’s – one will not be enough.

Common questions
Do I have to make my own bruschetta topping?
I recommend making the tomato topping if you can find ripe, delicious, in-season tomatoes! In a pinch however you could use 2 cups of store-bought bruschetta.
Where can I find boursin cheese?
Boursin cheese can be found in most grocery stores, usually in the deli / cheese section.

- 2 tbsp finely chopped red onion
- 2 tbsp extra-virgin olive oil
- 1 tbsp balsamic vinegar
- 1/2 tsp kosher salt
- pinch chili flakes or red pepper flakes

- To make crostini (toasted baguette):

Preheat the oven to 400°Fahrenheit. Use a bread knife to slice a baguette into 1-inch thick slices, about 20-24 slices. Place the baguette slices on a parchment paper lined baking sheet. Brush the bread slices with olive oil on one side and place in a single layer on the baking sheet. Bake for 5 minutes, then flip and bake for another 5 minutes until toasted. Set aside.
