I love sheet pan recipes like this Easy Sheet Pan Roasted Chicken with Vegetables.  While you may have seen viral recipes like the baked feta pasta, this is a great option for a dinner  packed with more vegetables! This vegetarian meal hits all the right notes – creamy cheese, protein-packed beans and roasted caramelized veggies.  This is one of my favorite meals to make for a quick weeknight dinner!

Ingredients needed to make this baked feta recipe

Beans:  canned butter beans bake up deliciously in this recipe; alternatively you could use cannellini beans

Tomatoes: use one pint grape tomatoes, baby or cherry tomatoes that can simply be added to the pan, no chopping required

Bell peppers: I like to use a combination of chopped yellow, orange or red bell peppers but you could use a green pepper too if you desire

Red onion: sliced red onions are the perfect match to the peppers and tomatoes

Olive oil: drizzle the extra-virgin olive oil all over the vegetables and beans on the pan

Seasonings: garlic powder, dried thyme, dried oregano, kosher salt and chili flakes (or red pepper flakes) are used to season the vegetables.

Feta cheese: use larger slices from a block of feta cheese for this recipe, the feta will have an almost creamy texture once baked

Garnishes: ground pepper, lemon slices or wedges & a drizzle of olive oil are the perfect finish to this one pan dinner

For serving: arugula, fresh herbs like fresh thyme or fresh basil, grains of choice or pita/crusty bread, yogurt

how to make this easy vegetarian sheet-pan dinner

Step 1: Preheat the oven to 400F.

Step 2: Line a large sheet pan or baking sheet with parchment paper.

Step 3: Add the rinsed beans, baby tomatoes, bell pepper pieces and sliced onion to the pan in a single layer. Drizzle over 3 tbsp olive oil, garlic powder, dried thyme, dried oregano, salt and chili flakes. Toss to combine everything on the pan. Make sure everything is well coated by giving it a good stir on the sheet pan. Nestle the feta pieces in between the seasoned vegetables and beans.

Step 4: Add the sheet pan to the rack in the middle of the oven and bake for 25-30 minutes or until the feta has softened and juicy tomatoes are starting to burst.

Step 5: Drizzle with extra olive oil, squeeze on some lemon juice and add some fresh ground pepper. Serve with arugula, grains of choice or pita/crusty bread and yogurt if desired.

Expert tips for making this sheet pan baked feta dinner

  • Enjoy this with a different green vegetable than arugula if desired. Try adding 1-2 cups chopped zucchini or a chopped bunch broccolini to roast along with the other vegetables.
  • If you can’t find butter beans, cannellini beans would be a delicious alternative.
  • Instead of mixing all of the ingredients together on the sheet pan, you can mix the rinsed beans, vegetables, olive oil and seasonings in a large mixing bowl first and then transfer to the sheet pan if that’s more you’re style.
  • This recipe is truly customizable to your tastes. If you prefer more tomatoes, double the tomatoes and use one less bell pepper. Or, if you don’t like red onions as much, use half a red onion and add a handful of extra tomatoes.  Do what makes sense for you!

Common questions when making this baked feta dinner

Can I add more feta cheese to this sheet pan baked feta recipe?
YES! If desired, add a few more slices of feta cheese before roasting everything together in the oven.

Will goat cheese work in this recipe?
I haven’t tested goat cheese in this recipe. However, you can slice a log of goat cheese into rounds and place on the pan instead of feta cheese. The goat cheese will soften when baked but might not keep it’s shape like the feta cheese. Feta cheese has a higher acid content so it won’t melt in the oven.

What if I don’t have a large enough sheet pan? 
Use the largest sheet pan or baking sheet that you have. Alternatively, you can bake everything in a large casserole or baking dish and it will be just as delicious!

Ingredients

  • 540 ml can butter beans, drained & rinsed
  • 1 pint baby, grape or cherry tomatoes
  • 2 bell peppers, cut into 1 inch pieces
  • 1 medium red onion, 1/2 inch slices
  • 3 tbsp olive oil

  • 150-200 g feta cheese, sliced into 6-8 pieces
