Step by step process for making these pomegranate cocktails

Step 1: To make a sparkly rosemary garnish simply run a rosemary sprig under a bit of water. Then, roll in sugar and set aside to dry.

Step 2: Make the rosemary simple syrup: In a small saucepan over medium-high heat, combine sugar and water. Bring to a boil, stirring until sugar is dissolved. Add in the rosemary sprig, stir and remove from heat. Let infuse for 5-10 minutes until desired taste is reached and then remove the rosemary sprig.

Step 3: To make one pomegranate vodka cocktail: To a cocktail shaker add rosemary simple syrup, pomegranate juice, vodka and a handful of ice and shake for about 20-30 seconds until the cocktail shaker is frosty. Strain into a cocktail glass like a coupe or martini glass and top with prosecco. Garnish with a sparkly rosemary sprig. Cheers & enjoy!

Expert tips

  • Make the simple syrup ahead of time and store in the fridge for up to 2 weeks!
  • If you want to make this into a mocktail, mix together the pomegranate juice with the rosemary simple syrup and top with a non-alcoholic sparkling wine or sparkling water or tonic.
  • Make this into a batched cocktail in a pitcher by multiplying the recipe by how many people you’re having over; stir all ingredients together in a pitcher and pour into glasses for guests.
  • Serve this cocktail in coupe or martini glasses with fresh rosemary for a festive touch!

Common questions about pomegranate cocktails with vodka

Do I need fresh pomegranates to make this cocktail?
All you need is pomegranate juice which you can find at most local grocery stores. If desired, you can use the pomegranate seeds (also known as pomegranate arils) from a fresh pomegranate for an extra cocktail garnish.

What if I can’t find pomegranate juice?
In a pinch you can substitute the pomegranate juice with cranberry juice. While it will obviously change the taste profile of this cocktail, it’s a great juice to use if you can’t find pomegranate juice during the holiday season as it can be quite popular.

Can I use pomegranate liqueur instead of pomegranate juice?
I don’t recommend using pomegranate liqueur in this cocktail; stick with the pomegranate juice as that is how this recipe has been tested with all of the other flavours.
