Brie cheese goes wonderfully with tender maple-cinnamon sautéed apples.

Brie is a favorite cheese of mine to use for appetizers.  It’s mild taste lends itself well to so many flavours, especially during the Fall and Winter seasons.

I love baked brie recipes like this Quick and Easy Maple Pecan Baked Brie in the cooler seasons. Warm, melty brie cheese with various toppings is truly one of the best easy appetizers during this time of year. And the maple cinnamon apples in this appetizer are for all of my apple-lovers out there because this apple topping tastes just like an apple pie!

Ingredients needed to make this baked brie with apples

Brie cheese: you’ll need a 250-350 g wheel of double cream brie. I recommend using double cream brie, which is super rich and creamy.

Apples: I love to use Honey Crisp apples in this recipe because they’re super flavourful and the apple slices stay together well when cooked

Maple syrup: maple syrup is a quintessential fall ingredients and pairs beautifully with the apples

Seasonings: ground cinnamon and ground nutmeg are a must to add flavour to the sautéed apples

Pecans: chopped pecans go lovely with brie cheese and the maple cinnamon apples; if needed, you can substitute with chopped walnuts or for a nut-free option use pumpkin seeds or even crunchy nut-free granola

How to make this maple-cinnamon apple baked brie

Step 1: Preheat the oven to 375°F (190°C) and line an oven-safe dish with a piece of parchment paper. Place the wheel of brie into the parchment lined baking dish. Score the top of the brie lightly in a diagonal pattern with a sharp knife. Set aside.

Step 2: While the oven preheats, make the apple topping: Add 2 tablespoons of butter to a medium-sized pan over medium heat. When the butter is melted, add the apple slices, ground cinnamon and ground nutmeg and stir to combine. Cook the apples over medium heat, stirring often, until tender and softened, about 8-12 minutes.

Step 3: Once the apples are softened, add the vanilla extract and maple syrup to the pan and cook for 2 more minutes, stirring a few times. Remove the pan from the heat and put a lid on the pan to keep the cooked apple slices warm.

Step 4: Bake the brie in the preheated oven for 18-22 minutes or until cheese is starting to bubble and almost ooze out. When the brie is baked to your liking, remove from the oven and spoon the cooked apple slices on top of the melted cheese. Spoon any of the maple sauce in the apple pan over the baked brie as well. Then, garnish with chopped pecans and fresh thyme leaves. Serve with your favorite crackers, toasted slices of baguette (crostini) or a crusty bread for dipping into the brie.

Expert tips

  • A good substitute for Honey Crisp apples are Ambrosia, Fuji or Pink Lady apples.
  • Make crostini to serve with this baked brie: Preheat your oven to 400°F and slice your baguette into 1-inch thick slices. Brush the baguette slices with olive oil on one hand and place on a single layer on a baking sheet. Toast for 10 minutes, making sure to flip the slices halfway through.  Alternatively you could use a sourdough baguette to make the crostini.
  • You can make this baked brie with apples the star of your holiday season cheese board! Bake the brie and let it sit for about 5 minutes. Then gently use the parchment paper edges to lift the brie out of the baking dish and place in the center of your cheese board. Fill in the rest of the cheese board and enjoy!

Common questions

Do I need to remove the rind from the brie wheel?
No, the rind on the brie is edible! What you will need to do is score the top of the brie which will make it much easier to eat.

Can I make the maple cinnamon apples ahead of time?
You can make the maple cinnamon apples up to 1 day in advance. Store the cooked apples in an airtight container for up to 1 day in the fridge. Remove the apples from the fridge about 1 hour before serving with the brie to bring them closer to room temperature and when the brie is baking, warm the apples gently over medium-low heat in a non-stick pan with 1-2 tablespoons of water to loosen the mixture. Then simply follow the rest of the recipe, topping the brie with the apples when they come out of the oven!

What type of brie cheese should I use?
You can use a double-creme or triple-creme brie to make this baked brie with apples appetizer.

How to store

I recommend serving the baked brie on the day it’s made. Any leftovers can be stored in an airtight container in the fridge for up to 2 days.

To reheat leftover baked brie, place the leftover brie on a piece of parchment paper in a baking dish in a preheated 325F oven until warmed through again. Alternatively, microwave on medium-low until the desired temperature is reached. You can also serve the brie cold by slicing up the baked brie and adding it to a sandwich!

Ingredients

For the brie

  • 250-300 grams wheel of brie cheese
  • 1 tbsp maple syrup

For the apples

  • 2 tbsp butter
  • 2 medium honeycrisp apples, thinly sliced
  • 1 1/4 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup

Garnishes

  • 1/4 cup chopped pecans
  • fresh thyme leaves
